When data is lost and no (usable) backup available, it's hard to know what to do. However it is often possible to get back important information from the pieces available.

That is the point where existing software is not helpfull in all cases. There are some tools existing that simplify working on those problems, but a good hex-editor and extensive knowledge about file systems, data formats and legacy applications are the most important resource in that area.
